Quesadilla is a Mexican dish made with tortillas filled with grated cheese, vegetables, guacamole / avocado cream, possibly fried chicken or minced meat. For vegetarians, chicken / meat can be replaced with, for example, canned white or black beans or chickpeas. Read the entire recipe before you begin.
You need this for 4-5 people:
- 4 large wheat or corn tortillas
- Grated white cheese
- 2 chicken breasts in thin strips or 200-300 g chop dough, minced meat, possibly chicken minced meat
- Or black / white beans (sheets are poured away)
This is what you do: Fry golden in liquid Melange. Sprinkle with smoked paprika powder and salt or taco seasoning.
Tomatsalsa:
- 8-10 sherry tomatoes or 2-3 ripe bunch tomatoes
- 1 clove garlic
- Optionally ½ finely chopped fresh red chili
- 1-2 tbsp chili sauce
- 1 tbsp olive oil
- Salt, pepper
This is what you do: Finely chop the tomatoes, garlic and mix with chili sauce (possibly ketchup). Season with salt and pepper and possibly finely chopped herbs, such as basil or coriander.
Guacamole with coriander – mix together with a hand mixer:
- 2 ripe mashed avocados
- Juice 1 lime
- 1-2 cloves finely chopped garlic
- ¼-½ finely chopped red chili
- 1 finely chopped ripe tomato
- 1 finely chopped small red onion
- Season with salt and pepper
Other accessories can be:
Peppers in pieces, cucumber in strips, green salad, or anything else you like.
This is what you do:
Place the desired filling and grated cheese between two tortillas. Squeeze lightly. Fry golden in liquid Melange, on both sides. Squeeze lightly. Pick up and divide into 4 triangles and each one chooses the accessory they like.
