Tasty taco salad with chicken

The dish can easily be made as a vegetarian dish by replacing fried chicken with, for example, cooked / canned chickpeas or black / white beans.

Tips for milk-free and egg-free (mayonnaise): Replace sour cream / yogurt with a milk-free plant, and mayonnaise with, for example, a little ravigotte sauce / mustard.

Pickled red onions can be made well before use, keep in the refrigerator for 8-10 days.

Pickled red onion:

  • 1 red onion
  • ½ dl vinegar apple cider vinegar / white wine vinegar
  • ½ dl won
  • 1 dl sugar

This is what you do: Boil vinegar, water and sugar. Cut the red onion into thin rings and pour over the hot sheet.

What do you need for a taco salad (4-5 people):

  • 2 chicken fillets, possibly canned beans / chickpeas
  • 2-3 tablespoons liquid Melange *

Choose what you have available:

  • 1 mango or pineapple (canned pineapple without brine)
  • 1 avocado
  • Tomatoes, peppers, gherkins
  • Salat
  • Optionally 1 small box of corn kernels (pour off the water)
  • Possibly fresh coriander
  • tortilla chips

design:

  • 1 ½ dl light cream or thick / Greek yogurt
  • Optionally 2-3 tablespoons mayonnaise
  • 3-4 tablespoons sweet chili sauce or tomato salsa
  • 1 teaspoon smoked paprika powder
  • ½ painted cumin
  • Peel and juice of 1 lime
  • Possibly a little grated fresh ginger

This is what you do:

Start by making pickled red onions. Continue to stir together all the ingredients for the dressing. Taste until you get the taste you like.

Divide chicken into thin strips and fry in liquid Melange in a large pan, over high heat. Sprinkle with salt and pepper. Quick frying. Vegetarian: Pour the sheet of beans or chickpeas and fry in liquid Melange and sprinkle over some smoked peppers before placing them warm over the salad. Place the fried chicken / beans on some kitchen paper or in a sieve so that the frying fat drains away.

Divide mango or pineapple into pieces. Avocado and gherkin in pieces or thin strips. Tomatoes in boats, sherry tomatoes are divided in two.

Just before serving, place the salad on a plate spread over vegetables, fried chicken in strips or fried beans and finish by drizzling over some dressing. The rest of the dressing is served as an accessory. Serve with tortilla chips.
