The porcupine mushroom is best if you press it well into the frying pan.

Lots of mushrooms are in the spotlight at the moment. The porcupine mushroom in the picture above is perhaps better known by its English name Lion’s mane. Some claim that it has properties that affect the psyche. The only thing I can tell you is that it is very good.

It is rare that I have come across a mushroom that to such an extent gives me the feeling of putting my teeth in light meat like this and especially if you fry it under pressure. As I tell in the recipes, this is a technique you can use on any fungus that grows large or in clusters.
